A Snowed in Breakfast

So this morning we were blessed with yet another snow day! When we were in school snow days were always full of snowballs, sledding, snowmen (and women), snow cream, and loads of other fun activities. Recently I have learned that in the world of being a grown up they are not so much of fun. Now they have come to mean getting behind on work, missing deadlines, and shear boredom. This morning I decided to change that....and with that Blake was treated to a somewhat delicious but not so pretty breakfast.

The menu this morning including cheese biscuits with thyme and parsley, a spinach and mushroom omelet, and fresh pineapple. One thing I learned this morning is I don't think I can ever screw up fresh fruit....

This was the first time I have ever made biscuits from scratch. I am more of a "pop open the can and pop them in the oven" type of girl and after this mornings experience I think I know why. Although they didn't take much prep time they didn't have much flavor either so I will not share that recipe....don't worry I will try again and hopefully get it right.

The spinach and mushroom omelet....although not too great to look at was DELICIOUS! And who knew making an omelet was as easy as 1, 2, 3,?

  1. Combine 3 eggs and a splash of milk in a bowl. Once mixed well add egg and milk mixture to a small frying pan that has been coated with a nonstick cooking spray(very important when it comes to step 3).

  2. In a separate pan saute fresh spinach and mushrooms with a little olive oil until both are soft and tender.

  3. Once your egg/milk mixture is 3/4 of the way done cooking add your mushrooms, spinach, and your choice of shredded cheese to one side on the omelet then "simply" (I use this term loosely because this is where I screwed up) flip the other half of the egg over your spinach, mushrooms, and cheese.....ENJOY!

Although my omelet did not have the prettiest presentation is was still mighty tasty! Also on a side note I keep forgetting pictures so they are coming!!!!
